A few days ago, my sister connected me with my first customer who requested a variety of not-too-sweet mini cupcakes for a work function. I'm not starting a business here, but I would never pass on another opportunity to cook for a party. As I was brainstorming ideas for cupcake and icing flavours, I realized, July 21st is National Junk Food Day. Just in time! And what way to celebrate than pigging out on a bunch of bite-size cakes and sampling creamy icing? Time to get down and dirty in the kitchen!

We settled on 5 varieties: lemon cream with vodka icing, red velvet with cream cheese icing, pistachio pudding, classic vanilla, and coconut almond (photo above, top to bottom).
A great opportunity to practice my piping skills and experiment with more decorative icing. More to come!
